Frozen Lemon Dessert for Citrus #SundaySupper


I'm allergic to chocolate.

A baker allergic to chocolate? Say it isn't so.

I'm also allergic to soy, nuts, and just about everything orange, well, except oranges themselves.

But, back to the Chocolate.

You see, I've lived most of my life convincing myself that Skittles were as good as Kit Kats and Starburst, even better than Twix.  But on Easter, nothing could compare with chocolate bunnies, right?

Well, this year Easter falls on the 31st, and shares the day with National Oranges and Lemons day... hurray!  So our theme of the day is Citrus, and believe me, these Sunday Supper recipes will get you puckering up!

And mine?  I dug deep in the old recipe files for this one.

My Mom used to serve this Frozen Lemon Dessert for dinner parties, smart, as this is a perfect do ahead dessert.  And I'll never forget me sneaking into the kitchen whispering to my Mom as she was clearing the dishes, asking "are they done, yet?" so I could help myself to whatever was left in the pan.


I haven't had this dessert for what must be at least 30 years.  But it was just as good tonight as it was back then.

The simplest of recipes.  And the simplest of posts.  On what to me, is the most important day of the year.

Frozen Lemon Dessert

Separate 3 eggs and place whites and yolks in seperate bowls. To each add 1/4 cup sugar, and beat each until the whites are silky and yolks a pale yellow.  To the yolks, add 1/4 cup lemon juice and pour into a small saucepan.  Heat over low heat just until slightly thickened and sugar melts (make sure not to scramble the eggs- watching very carefully).  Set aside and cool completely.  In a third bowl add 1 cup of heavy cream and beat until whipped.  Fold yolk mixture into white mixture, and then add in the whipped cream very carefully.  Next crush vanilla wafers for crumbs to use on the top and bottom.  Place a layer of crumbs in a 9x13 pan, or cupcake pans, then spoon in lemon filling.  then top with more crumbs. Freeze until firm, at least 2 hours, and then top with more sweetened whipped cream and wafer crumbs if desired.

  1. Bright and cheery as your childhood memories, Diana, this lemon number is a keeper. Always good to have a lighter dessert as an option for dinner guests, nest-ce pas? Of course, anything that requires whipped cream gets my vote =)

  • Oh man, I cannot imagine being allergic to chocolate - what a bummer! But hey, I love citrus just as much as I love chocolate, so I suppose it's not so bad (I guess it'd just be the whole thought of "the grass in greener..."). I love this dessert it sounds perfect for Spring!

  • I only recently even started liking chocolate, for some reason I never liked the taste of chocolate growing up. But after having my daughter my taste buds have changed slightly and I now do enjoy some chocolate. But fruit flavours, especially citrus will always have my heart when it comes to desserts. This sounds like heaven in a bite.
